Recipe: Make Ahead Breakfast Burritos

Today was Tyler's first day of law school!

I made him stand by the mailbox like he was waiting for the bus, even though he wasn't.  Haha.

So to help him get through his first week I made him breakfast burritos using his mom's recipe.  (Thanks for the recipe, Brenda!)  Now, Tyler is a notorious vegetable hater and so I thought I'd share the recipe in case there's anyone in your life who doesn't like all the peppers and onions in their burrito.  (We'll just have to sneak in those veggies somewhere else, huh?)

The recipe is quick and simple, using only one skillet.  Plus, it makes 6 burritos and they refrigerate and reheat well.  No reason not to make them, right?!  So follow me after the break for the recipe!

  1. Thanks for stopping by my blog! I've never heard of pancake pens before--I had to look them up! I must say... I'm glad I got my condiment bottles for a whole lot cheaper! :-P Except you can mix the pancake batter directly in the pens and not mine...

    I need to remember breakfast burritos more often. They're so easy and yummy!

  3. This looks yummy, I dont think we can get ground sausage here though, might be nice with beef mince too, I'll have to try it and see :)
